When I Rise, Give me Jesus and Coffee!

One of our favorite things to experiment with (and enjoy!) is Keto coffee.  There are endless possibilities!  Coffee is also a great way to get your fat in by adding MCT oil or powder.  In Keto-land, that is basically edible gold!  We decided to compile a list of our favorite coffees, keto style.  And no, butter coffee is not on the list!

CLASSIC MORNING KETO COFFEE

This one is more of a tip than a recipe.  We drink our daily morning coffee with a tablespoon of Dr. Colbert’s MCT oil powder and a squirt of liquid stevia.  Creamers and other sweeteners are loaded with sugar, carbs, and other unhealthy ingredients that will throw you out of your keto zone before you finish your cup!  We prefer Dr. Colbert’s MCT oil powder because we’ve found it to be the purest (ingredient wise) and comes in a variety of flavors including coconut, vanilla, and hazelnut.

Alternatively, you can make iced coffee by mixing 1 part chilled coffee with 1 part almond milk, a dash of heavy whipping cream, a squirt of liquid stevia, and ice.

 

 

VANILLA KETO COFFEE SMOOTHIE

Inspired by this recipe from Forget Sugar Friday

Ingredients

One serving – this really is enough for 2 servings, if you decide to split it, cut the nutritional information in half.

2/3 cup coffee
1-1 1/4 cup unsweetened almond milk
1 scoop Colbert’s vanilla MCT powder
1 tbsp chia seeds
2 tbsp heavy whipping cream
2 squirts of Sweetleaf vanilla sweet drops*
Ice cubes

Instructions:

  1. Add all ingredients in blender.
  2. Pour in glass.
  3. Wait 5-8 minutes to allow the chia seeds to thicken the smoothie.
  4. ENJOY!

*You can also use 1 tsp vanilla extract and 3 squirts of stevia (or 1/8 tsp)
in place of the vanilla sweet drops.  Be careful if you use the vanilla sweet drops – there is 1 carb per each “squirt”, so getting carried away with the “squirts” can quickly cost you!

Nutrition (per serving):  Calories 207, Fat 17g, Carbs 6g, and Protein 3.25g

If you reduce the sweet drops and whipping cream to one tablespoon each:  Calories 157, Fat 12g, Carbs 4g, and Protein 3.25g

 

KETO JAVA CHIP FRAPPUCHINO

Ingredients

Makes 2 servings

1 ½ cups coffee (cold brewed or chilled)
¾ cup almond milk
¼ cup heavy whipping cream
1 tbsp cacao powder
1/8 cup cacao nibs or dark chocolate chips
5 squirts liquid stevia
Ice*

*The amount of ice really depends on how “slushy” you want your drink to be, I recommend starting with less and adding more until you get your desired consistency

Instructions

  1. Make black coffee of your choice and chill for at least an hour or overnight.  You can also cold brew if you wish.
  2. Mix milk, heavy whipping cream, stevia, and coffee.  Add in cacao powder until dissolved.
  3. Put coffee mixture, chocolate chips, and ice in blender and blend until smooth.
  4. Enjoy immediately (you’ll want to)!  Garnish with whip cream or chocolate chips if desired.

Nutrition (per serving):  Calories 203, Fat 15.7g, Carbs 5g, and Protein 3.4g
