Can I just tell you how much I love fall! EVERYTHING about it is lovely – cool weather, pumpkin lattes, leaves are changing, pumpkin Oreos, mulled cider candles, pumpkin whipped topping, bonfires, pumpkin cheesecake, roasted marshmallows…. did I mention pumpkin?
Anything with pumpkin in it will cause my head to spin. And since I have changed my diet to the Keto lifestyle, these lovely words jumped out of Pinterest and turned my pupils into hearts last month — “Keto Pumpkin Bread”! What in the world??? Pumpkin and Bread and Keto!?!?!?
I know, I know… you are saying, “Linda, it’s 93 degrees outside! How can you think of burning cider candles and eating pumpkin bread right now?”
Well, my dear friend, come on over and I’ll show you! It starts around 6:30am with a nice hot mug of coffee, a slice of this amazing pumpkin bread, my Bible and prayer journal, and a red sherpa blanket (because while it may be 93 degrees outside, it’s fall weather inside my house… always!). Anyone else wear jackets and slippers in the summer because your husband controls the frozen tundra? haha! 🙂
BREAD:
6 eggs
1/2 cup coconut oil
2 tbsp unsalted butter, melted
1 cup pure pumpkin
4 tsp pumpkin pie spice
2 tbsp sour cream
1 1/4 cup powdered confectioners Swerve
2 tsp vanilla
1/2 cup + 2 tbsp coconut flour
1/2 tsp salt
1 1 /2 tsp baking powder
ICING:
4 tbsp powdered Swerve
2 tsp melted unsalted butter
2 tsp heavy whipping cream
For the Bread:
Beat eggs, swerve, pumpkin, sour cream, vanilla, and pumpkin pie spice until combined
Slowly add coconut oil and melted butter to the mixture
Combine flour, salt, and baking powder in a separate bowl – then gradually add to other mixture
Once it is all mixed well, pour into a regular meatloaf
pan, coated with coconut oil spray
Bake in 350 oven for approx. 45 minutes or until a toothpick is inserted in center and comes out clean.
Icing:
Melt butter, add Swerve, and mix.
Add heavy whipping cream – mix. Add more if needed to
make it thinner. Drizzle over the bread while still warm.
Serve warm – refrigerate leftovers (if you have any!)
