Those who share life with us first-hand or through this blog, know that we just completed the 6th Annual REVIVE Ladies Retreat and the 3rd Annual REVIVE Girls Retreat in our community. It’s packed into one weekend and takes months of hard work by many hands to prepare.
A couple weeks after REVIVE, we try to gather the hard-working team together for a small “thank you” dinner. Last week, we had that gathering. Five of the young girls in our church helped me decorate and set up for the evening. Although we were missing a few, the majority of the team was able to attend. We had a meal together, fellowshipped, played some games, and shared some testimonies of what God did during the REVIVE weekend. It was refreshing to enjoy the company of so many Christian women!
You know when women get together, there’s usually conversations of cooking and baking. This night was no different, as the most frequently asked question I received from the evening was…..how did you make those cauliflower potatoes? So, I promised I would share. I’ve tried about 4 different recipes, but this is where I’ve landed. I made some adjustments and this is now my all time favorite:
- 20 oz. of frozen riced cauliflower, cooked (I buy 2 bags of Birds Eye Cauliflower)
- 1/4 tsp. roasted garlic powder (Badia roasted garlic)
- 1 tsp. salt
- 1/4 cup heavy whipping cream
- 6 tbsp. unsalted butter
- 6 oz. cream cheese, softened
- 1/2 cup shredded parmesan cheese (can use asiago also or a mix of parmesan and asiago)
Blend all ingredients except for the parmesan cheese in a food processor. When smooth, stir in 1/4 cup of parmesan cheese. Pour into baking dish (I use an 8 X 8 size) coated with cooking spray and top with remaining parmesan cheese. Bake at 400 for 30 minutes. I let the top get a little golden before removing. Enjoy!

The most important thing to remember from today’s post, is to have a group of friends that you share life with, pray with, and encourage one another to grow closer to the Lord. Do you have this in your life?
Hebrews 10:24 says “And let us consider how we may spur one another on toward love and good deeds.”
The best way to find this in your life is to first find a church family. If you don’t have one, I hope you will make a commitment today to start praying, asking God to help you find one. You need one and they need you!
Hebrews 10:25 goes on to say “And let us not neglect our meeting together, as some people do, but encourage one another, especially now that the day of His return is drawing near.”
So, when you find that church family – be faithful! Don’t neglect being there on Sundays (or whenever there are other opportunities to gather). Don’t go in looking for what you can get out of it – ask God to help you be a blessing to someone else. As you seek to learn more about Him and to care for others, God will supply your every need in ways you never dreamed possible! ❤️
Ecclesiastes 4:9-12 “Two are better than one, because they have a good return for their labor: If either of them falls down, one can help the other up. But pity anyone who falls and has no one to help them up. Also, if two lie down together, they will keep warm. But how can one keep warm alone? Though one may be overpowered, two can defend themselves. A cord of three strands is not quickly broken.”
Strength comes when we hold hands, encourage each other, and love each other as Christ loves us!
